On a boat, when you are dealing with sharks over the gunnels or just leaning over cutting a line or something, again, there is a chance you could drop it again and sitting on 200 feet of water, it's always nicer to have another $6 knife handy than just one $200 one sitting on the bottom...
I've also seen guys completely KILL their blades on knives they've been bragging about all day trying to cut through shark skin.
I whip out my $8 fillet knife and $6 sharpener and then my $3 Benny's razor knife with a couple of extra blades and cut the meat with my fillet knife and then the skin with my razor knife.
I can have half the shark butchered before most guys can even get a decent edge back on their $125 carbide filleting set...
My ways ain't always pretty, but I've handled a LOT of sharks in my day and fed a lot of seniors with all my free fish drops...
Ain't too many senior citizens sittin around eatin Mako Shark and Tuna steaks for FREE unless they happen to be pals with Ole Sharkey...

I have the apex, with 100-200-400-600-1000 stones and 2K-4K-6K tapes.
my griptalan is so sharp if you try to shave hair YOU WILL BLEED, my one chef knife in the house has cut everybody that has used it, AFTER I warn them that's the sharpest knife you have ever used! LOL (this knife is double beveled)
i have not yet double beveled the other knife..... it would be nuts, it has good steal so it can take the low angel
get and angel cube ($35) and magnet ($3) and a loupe (i got a 60x one) and "quick change spring),it does take some practice but you can get things VERY sharp. find all these here www.chefknivestogo.com/edgepro.html
there is also the "Wicked Edge" a guy at work has that one and it works well too, but it was more $$$ so i did the apex route.
The best part is its very consistent, you set the angle and go (angle cube really helps) and you can resharpen at that exact angel very easy
I don't know what you use as sharpness test, but i can put my knife at the lowest angle possible on the thumb nail and it grabs/will shave it if not careful
for paper i can set the knife on the paper edge and push cut through it, no fast swiping or anything, just moving slow
I can nearly push cut Toilet paper but i need to refine a bit more first. one or 2 areas of the blade.
to resharpen i can start at the 1000 or if it not bad I'll just use the tapes again.
going from 100 to 6K takes about 30-45 minutes, but you only need to do that if you re-profile the knife or it is badly damaged. in most cases you can sharpen with the 600 again, and most of the time i start withe the 1000 and work up from there

It was a pretty big knot, I was pretty confident I could hit it. So I wound up and let the knife fly. I don't know if the knife hit the mark, because as soon as it left my hand, the Platoon Sergeant hit me square in the face and put my young kiester in the dirt.
Standing over top of me, he said, "Let that be a lesson to y'all - When you throw your knife, you throw away your weapon."
I haven't thrown a knife since.
